Comments

Met with kitchen Manager and he provided me with a following information:

- all staff in the kitchen is recertified
- daily temperature logs are up to date ( ensure to keep the chemical log for the low temp dishwaher s part of your routine/daily monitoring )
- chlorine measured at the low temp dishwasher 50ppm
- glass-washer 50ppm
- quats 200ppm ( wiping clothes )

Suggestion:
- vent screen above the cooking area require cleaning
- repair/replace some damaged ceiling tiles
- garbage bins area to be enclosed and integrative pest control measures to be in place
