Observation (CORRECTED DURING INSPECTION):
The handwashing sink is being covered with a tray of spices again. Staff are unable to wash their hands when they become dirty. This has been mentioned in previous inspection.
Corrective Action(s):
Immediately relocate the tray of spices to a different area, so staff are able to wash their hands. During the inspection, staff relocated the tray of spices.
**If the handwashing station is found to be inaccessible, a ticket with a fine will be issued.**

304 - Premises not free of pests [s. 26(a)]
Observation:
Mice droppings found in the lower food prep and storage room on the floor and lower shelves and on the dough making machine. Droppings also found in the upstairs food preparation area on the floor under the dishwashing area and the handwashing sink.
Corrective Action(s):
1) Complete a thorough cleaning of the whole premises from top to bottom. Ensure to move all equipment and tables, buckets, etc. off the floor and away from walls so floors can be washed thoroughly.
2) Call a professional pest company to eliminate the mice. Follow all recommendations made by the pest technician. Submit reports from the prest company to our office for review.
3) Pest proof the premises by blocking all openings around pipes, block holes in walls, and block gaps around exterior doors.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation:
The exterior doors in the basement have no door knob and there are gaps around the door which are allowing pests in. This was mentioned in past inspections. There is an opening around the pipe of the upstairs handwashing sink. Pests can enter the upstairs kitchen through this hole.
Corrective Action(s):
1) Install door guards or door sweeps along gaps/openings around doors.
2) Block all openings around pipes and holes in walls with wire mesh (1/4" or smaller).
3) Contact a professional pest company to eliminate the mice problem. Follow all recommendations made by the pest technician.
4) Improvement required in cleaning. A detailed and thorough cleaning from top to bottom is needed of the whole premises.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
Accumulation of food stains, dust, and grease found on walls, shelves, equipment and racks in food preparation areas. This will attract pests. This has been mentioned in previous inspections and no improvement has occurred.
Corrective Action(s):
A thorough, deep cleaning of the premises from top to bottom is required.
- Remove all items off floors, shelves and racks so these surfaces can be scrubbed clean.
- Move all racks and equipment away from walls so the floor underneath and the wall behind is scrubbed clean.
- Wash all upper walls and ceilings to remove dust and food stains.
- All walls, surfaces, ceilings, floors shall be cleaned on a regular basis. Place them on a cleaning schedule.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The low temperature dishwasher had a [Cl2] of 0ppm. Dishes are not being sanitized and germs are not being killed.

2) The pipe under the 2-comp prep sink is leaking. A bucket is placed under the pipe to catch the leaking waste water. The pooling water will attract pests.

3) The door latch on the walk-in-cooler no longer keeps the door tightly closed. Cold air is constantly escaping and the food is barely be kept below 4C.
Corrective Action(s):
1) Immediately call a repair company to fix the dishwasher so the rinse cycle has [Cl2] between 50-100ppm. Immediately sanitize dishes manually, after it comes out of the dishwashwer, by filling one of the prep sinks with hot water and bleach (1 Tbsp of bleach per 4 Litres of hot water). Change every 2 hours.

2) Repair or replace the leaking pipe so it no longer is leaking.

3) Repair or replace the door latch/handle on the walk-in-cooler so it keeps the door tightly closed.

Failure to fix the dishwasher by tomorrow will result in closure of the premises until the dishwasher is fixed.

Follow Up to "Critical" Violations Noted on Previous Inspections (if applicable): No corrections entered
Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -17C or colder; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with proteins separate from RTE foods; and foods stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- FoodSafe certified staff present.
- General sanitation level is unsatisfactory. Huge improvement is needed and requires to be maintained. If sanitation level is not meeting minimum standards by Mar. 27/23 then the premises may be ordered CLOSED so it can be cleaned.
- Structural improvements to the broken floor tiles and damaged walls have NOT be completed yet. These were required to be completed last year.

A follow-up inspection will be completed tomorrow to ensure the dishwasher has been fixed. Failure to fix the dishwasher will result in CLOSURE of the premises until it is done.
