Observation: No time logs for sushi rice.
Corrective Action(s): Sushi rice is considered to be potentially hazardous food and must not be kept for longer than two hours at room temperature as the pH is not low enough to prevent possible pathogen growth.
Operators are required to maintain time logs of when the rice is prepared, when discarded, and volume discarded for each batch of rice prepared.
This has been discussed with the operator on several occasions with written notification that progressive enforcement would be implemented issued in June of 2017.

203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation: Foods cooling on the counter - prawns 26C; blanched vegetables 22C; cooked chicken 21C.
Corrective Action(s): All potentially hazardous foods must be kept above 60C at all times or if being cooled must be actively cooled to 4C within 6 hours. Foods must not be left uncovered on the counter throughout the day.
This has been discussed with the operator on numerous occasions and the operator has been advised that progressive enforcement would be implemented.

Observation: One 40 liter bowl of raw chicken, two cafeteria trays of wrapped raw chicken, and one small bowl of raw chicken on counter 6C -8C; 5 liter bowl of imitation crab filling 7C; 2 bowls of chopped, peeled, avocado 19C; two trays of prepared sushi rolls 14 - 16C.
Corrective Action(s): .
1) All potentially hazardous foods above 4C for greater than 2 hours to be discarded.
2) All foods must be kept in the refrigerator unless the employee is actually working with that food. Do not leave work station without placing all potentially hazardous foods in the cooler until such time as the employee can return to that task.
This has been an ongoing issue, with two previous infraction tickets issued, failure to comply with the WRITTEN ORDER ISSUED this date may result in the request for a compliance meeting to discuss permanent closure of this facility.
