Observation (CORRECTED DURING INSPECTION): Two trays of bacon were stored at room temperature. Time stamps were improperly labeled.
Corrective Action(s): Discard the bacon. All hot potentially hazardous food items must be stored at > or = 60C or properly time stamped.

Observation (CORRECTED DURING INSPECTION): One of the sanitizer buckets in the back of the kitchen measured at 0ppm chlorine concentration.
Corrective Action(s): Prepare new sanitizer. Ensure that all surface sanitizers are measured at min 100ppm chlorine concentration and monitored using appropriate test strips.

Observation (CORRECTED DURING INSPECTION): Paper towels missing at the front handwashing station (near the cash register).
Corrective Action(s): Immediately provide paper towels at this handwashing station. All handwashing stations must be fully supplied with hot/cold running water, soap, and paper towels to properly wash hands.

Observation: - Water pooling on floors in the back storage room. The pipe in the back janitorial area was leaking.
- Significant build up of garbage at the condiment stand.
- Too much clutter in the back storage area (ie boxes, empty crates)
Corrective Action(s): - Fix the leaky pipe and dry the floors. Keep floors as dry as possible to prevent pest issues.
- Clean the condiment stand. Routinely check the sanitary condition of the condiment stand.

Comments

- General sanitation is needs improvement. See violation section above.
- Two other handwashing stations supplied with hot/cold running water, soap, paper towels.
- Three compartment sink available for manual dishwashing. Sanitizer available at 200ppm QUAT concentration.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity at the time of the inspection. A professional pest control company inspects the facility monthly. The summary reports for Dec, Nov, Oct 2018 show no findings.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers (walk in, prep, undercounter): < or = 4C
- Cold foods (ie sliced tomatoes, lettuce, onions) stored in the sandwich prep table at room temperature that are time stamped. Ensure that time stamps are accurately labeled.
- All freezers (walk in, upright, chest): < or = -18C. Note that the door seal of the walk in freezer was peeling.
- Thermometers available in all coolers and freezers.
- Hot holding units (beef, chicken patties, chicken strips): > 60C
- Daily temperature logs available on site and kept up to date.
