206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation: Samosa in the hot holding unit ranged from 43C to 50C. Hot holding cabinet was not at 60C when the foods were placed into the unit.
Corrective Action(s): Hot potentially hazardous foods must be stored at greater than 60C to prevent the growth of pathogens and or the formation of toxins. Hot holding cabinet must be greater than 60C before hot foods are placed into the hot holding unit. Samosa were reheated to 74C.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Staff stated equipment and utensils are washed in soap, rinsed with water, sanitized in 100ppm bleach sanitizer, followed by soaking in hot water, and then air drying.
Corrective Action(s): After sanitizing, equipment and utensils are to be air dried - do not soap equipment in water (this can result in recontamination of equipment and utensils). Operator must also obtain a sufficient number of sink plugs as well - enough for all the sinks and not just one plug to be shared.

Observation: Kitchen handwash station cold water tap is not work (water turned off due to a leak) and washroom handwash station hot water tap is not working (water turned off due to a leak).
Corrective Action(s): Handwash stations must be easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels at all times to facilitate proper handwashing. Plumber has been called and will be servicing sinks today.

Observation: Old food debris was found along the door seals in the prep cooler and under equipment.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times to prevent potential pest attraction.

Observation: 1) Carpet was found in the back cooking area.
2) Light shields in the cooking area are missing shatter shields.
Corrective Action(s): 1) Remove carpet from the kitchen - all surfaces must be smooth, non-absorbent, and easily cleanable

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Thermometers in the walk-in cooler and prep cooler used for temperature monitoring are not accurate. Prep cooler read 2C (8C with a probe thermometer) and the walk-in cooler read 3C (6C with an infrared thermometer).
Corrective Action(s): Accurate thermometers are required in cold holding units to verify proper cold holding temperatures.

Comments

-Display freezer was at -18C
-Ice cream freezer was at -24C.
-Front handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-No signs of pests noted at the time of inspection.
-Food items stored off the floor and covered.
-Sanitizer spray bottle tested at 200ppm. Replace broken nozzle and ensure bottle is labelled.
-Random selection of canned items were found to be in good condition and within the best before date.
