Observation (CORRECTED DURING INSPECTION):
The sanitizing solution cloths are stored in had [Cl2] of 0ppm. Cloths shall be stored in sanitizer solution with [Cl2] of 100ppm or Quats of 200ppm, as this will prevent bacteria from growing.
Corrective Action(s):
Immediately place cloths in new sanitizing solution and change the solution every 2 hours. During the inspection, staff changed the sanitizing solution. The [Cl2] was 100ppm.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -18C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer was 200ppm, and [Cl2] was 100ppm.
- Foods stored in food grade containers; covered; labeled; date coded; stored in groups with raw proteins separate or below RTE foods; and 6" off the floor on platforms, shelves or racks. Ensure no food items, items that will touch food (wrappers, happy meal boxes, etc.) are stored in the washroom.
- No expired foods for sale or in use. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests.
- All surfaces are in good working order, cleanable, durable, smooth, and absent of holes, cracks or dents. The tiles in front of the ice cream machine have been replaced.
- FoodSafe certified staff present.
