Observation: Premises still not maintained at an acceptable level of cleanliness. Areas below shelving in back and in walk-in cooler, and below counter in front sushi area not cleaned well enough or often enough.
Corrective Action(s): Improve cleaning by A) continuing to remove clutter; B) clean more often; C) create a detailed cleaning schedule (with instructions) for each area of premises including walk-in cooler. Check at next inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Shelving, work surfaces etc. in poor condition and/or covered with duct tape, aluminum foil or cardboard, although less than last inspection. As a result cleaning suffers. Food accumulations noted on and around this equipment. Equipment, hard surfaces and general work areas must be constructed in a manner that allows easy cleaning.
Corrective Action(s): Discard two shelves at deep fry station as discussed. Replace as space permits. Remove all cardboard, foil and duck tape covering on hard surfaces and make sure these surfaces and areas get cleaned on daily basis. Revise or improve cleaning schedule as discussed. Check at next scheduled inspection. Pot and pan storage on floor below cookline must change. Do not store on floor. Obtain a secondary storage unit that can be moved to allow easy cleaning of this station. Check at next scheduled inspection.
