Observation: a) Back door open at the start of the inspection.
b) The back door has a gap at the bottom when closed. This could allow for the entry of mice into the premises.
Corrective Action(s): a) Keep the back door closed at all times or install a screen.
b) Fix the back door within 2 weeks.

Observation: The faucet at the 3-compartment sink is leaking.
Corrective Action(s): This will be fixed when the grease trap is installed in the next month. The sink will need to be raised up when the grease trap is installed.

Observation: Light covers missing from all of the lights in the back.
Corrective Action(s): Install light covers within one month. They could be either fitted directly to the light bulb or covers for the entire fixture.

Comments

-Discussed the installation of a commercial fume hood. The owner agreed to install a ventilation hood for the donair cooking area at the front. The timeline will be discussed during the follow up inspection after the owner has received quotes for the installation.
-Ensure that all foods are stored in sealed, pest proof containers.

A new grease trap is on site and it will be installed within one month.
All coolers were < 4 C.
All freezers were < -18 C.
Some old droppings found, traps in place. Ensure that the droppings are cleaned as soon as possible.
Hot holding was > 60 C.
Hand sinks supplied with hot and cold water, soap and paper towels.
