304 - Premises not free of pests [s. 26(a)]
Observation: A few areas of facility look to have rodent chew marks and activity. Minor signs of rodent activity in low activity secondary areas of premises including female washroom. Discussed with operator and may be artifact of old activity. Monitor.
Corrective Action(s): Block entry and movement by plugging all observed holes in walls and floor. Re-affix baseboards to wall in a manner to eliminate all gaps.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following equipment and areas of facility noted with excessive build up of food debris and or dust-like cobwebs:
- ceiling and upper walls in kitchen area;
- wall below counter and next to prep cooler;
- glass shelves in front area;
- bread display case, freezers, and cooler as discussed;
- dishsink and ice machine;
Carpet in hallway leading to washroom in poor condition due to ineffective cleaning quality or frequency. Discussed;
Corrective Action(s): Clean all areas and equipment in facility as discussed. Clean in conjunction with updated sanitation plan. Remove items from facility preventing proper cleaning and organization as discussed.
Sanitation plan and general cleaning to be reviewed at follow up inspection date noted.

314 - Operator has not provided acceptable written sanitation procedures [s. 24]
Observation: No written sanitation plan in place to systematically keep facility in good sanitary condition. Old facility in need of enhanced cleaning schedule to keep sanitation in order.
Corrective Action(s): Develop a written sanitation plan breaking down the scheduled cleaning of all equipment, work surfaces and general environment to ensure minimum sanitation standards are maintained. I will email guides and templates to help with the creation of proper and more comprehensive procedures.

Comments

Several cooling units not in operation due to seasonal needs, including two domestic coolers. Make sure to clean up and strategically organize food storage for minimum risk as discussed.

Facility floor old and deteriorating in many areas. Will monitor situation. Floor will eventually require replacement. Monitor for now.

Bleach solution should be measured in spray bottle (1 tsp bleach to 1 bottle (1 litre) will be 100 to 200 ppm. measured solution bleached out strips.
Remove old and unused equipment to free space and improve general cleaning as discussed.
