Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Various equipment stored in unsanitary condition. Rodent droppings observed on lower shelves and in amongst food preparation equipment.
Three brushes used for sweeping flour on surfaces have evidence of rodent activity and having been chewed. The brush debris on lower surface and significant amount of bristles on lower shelf.

Correction: Remove all dishes and equipment from lower shelves until rodent infestation is eliminated. Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.

Comments

Follow up inspection conducted for re-opening of the premises after issuing a closure order.

Clean up has been conducted throughout the facility. Rodent droppings were removed.

- Parts were being replaced for the upright cooler units at the front at time of inspection. Ensure ambient temperature is maintained at 4C or below before placing food items back in the cooler.
- More droppings were observed on the bottom of bread racks inside the proofer. They were pressure washed & sanitized at the time of inspection.
- Dead mouse by the hot water tank has been removed.
- Flour and other dry ingredients residues are cleaned up.

Ensure following is done by November 17, 2022:
- Install a well fitted door by the electrical room.
- Clean and remove all foam sealants that are contaminated by the wall in the electrical room. Re-do the foam sealants.
- Place all bagged ingredients in a proper storage unit with lids.

Cleaning and sanitizing will have to be done BEFORE & AFTER OPENING (2 times a day). Ensure all corners and hard-to-reach areas are WIPED with sanitizer solution to remove trails of rodent urine & droppings. Continue to have professional pest control company visit every week for monitoring, and forward the reports to the undersigned.
