Corrective Action(s): Glassware to be washed and sanitized via kitchen dishwasher in the interim until bar glasswasher is in good working order. Ensure all glassware is properly sanitized prior to use.

Observation (CORRECTED DURING INSPECTION): Bleach water sanitizer exceeded 200 ppm chlorine.
Corrective Action(s): Bleach water sanitizer was remade and tested at 100 to 200 ppm chlorine bleach. Ensure sanitizer is always available during operations at safe and effective concentrations (e.g. 100 to 200 ppm chlorine bleach).

Observation: Mouse droppings observed in some areas (open storage cupboards and on floor - in hard-to-reach areas).

Note: It was stated that premises is serviced by a pest control technician on a routine basis--operator to provide most recent pest control report.

Low temperature dishwasher (kitchen) measured 48 degrees C and 50 ppm chlorine sanitizer in the rinse residual at the utensil surface (min. required: 50 ppm chlorine).
Operator FOODSAFE Level 1 valid to March 2, 2025.
*Cook line cooler temperature slightly elevated (6 degrees C) at time of inspection. Build-up of ice observed. Cooler may require defrosting, adjustment, and/or service. Monitor and ensure temperature returns to 4 degrees C or less prior to using for food storage.
