Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Meat slicer appear to have food debris that resemble pepperoni on the guard and blade. Staff informs that the unit is usually cleaned after use.

Floor around dough mixer cleaned.
Meat slicer cleaned, explained that all parts must be wiped down properly.
Back door was closed at time of inspection, no flies observed.
Racks in prep coolers have been cleaned, noted that the shelving underneath has some tomato sauce and rice collected and operator will have that properly cleaned by end of the day.
Ceiling lights will be repaired by next routine.
Main chef just obtained his foodsafe two weeks ago and is aware of expiry date.
Please have office email me last 2 months pest control service reports. No findings today.
