Observation (CORRECTED DURING INSPECTION): Plates stored below food warmer counter and mixer bowls on lower shelf adjacent to mixer equipment - stored together with mouse droppings.
Corrective Action(s): Cleaned, sanitized food equipment and utensils are to be stored in a sanitary location that protects them from contamination prior to their next use.

Affected equipment to be sent through dishwasher to be cleaned and sanitized.

Observation: Mouse dropping accumulation observed in several areas of kitchen facilities: food untensil storage counter behind microwave, hot holding counter lower shelf where dishes are stored, left counter adjacent to stove, on top of steel pony wall separating stoves from utensil counter, support counter underneath oven, on top of counter behind coffee machines, on storage shelf below work counter to the left of dough mixer, on top of ice machine, floor behind wheeled dry food bulk bins, under steel shelves for single use container storage, on floor under shelves in dry storage room, under slicer wheeled cart, floor along wall at chemical storage area, and on floor around equipment at kitchen center cooking line.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.
Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine) after cleaning.
