Chemical dishwasher is at 100 ppm chlorine residual, test strips are being used to check the dishwasher daily.
Sanitation has GREATLY improved in all of the following areas:
1) Underneath the cooking line and particularly the deep dryer (no grease or debris observed)
2) The dry storage area with the canned goods is tidy and organized
3) The storage area for utensils has also been organized
4) The walk in freezer has been organized so that all food is on shelves stored properly

Keep this level of sanitation and organization in your kitchen! It will help to facilitate cleaning.
