Observation: Knives being stored in an opened can where there is food debris collected and rust on the bottom of the can.
Correction: Can discarded. Obtain a proper knife holder to store knives. Recommend obtaining magnetic strip to save space.

No food being cooled at time of inspection.
Egg rolls relocated to center location of hot holding unit and measured at 61C.
No wet wiping clothes stored on the counter.
100ppm chlorine adjusted.
Regular dishwashing detergent used and 200ppm Quats obtained at third sink.
Please ensure to review Quat test strip use to ensure that 200ppm Quats is obtained to sanitize dishes.
Magnetic strip mounted on wall to hold knives.
Cleaning improved, grease still noted on cardboard between fryers.
*Please remove cardboard and thoroughly clean these areas.
