Freezer being defrosted - very good.
- Use of domestic fridge for potentially hazardous foods should be minimized. Temperatures ranged from 5 to 10 C, but door often opened at beginning of rushes. Discussed with operator and recommended reduced use of this unit for potentially hazardous foods.
-Sushi bar, prep coolers and upright display coolers all maintaining temps. below 4 C. Good.
-Freezers below -18 C.
-Dishwasher (high temp) obtaining 73 C at plate - ok
Handwashing facilities equipped with paper towels and liquid soap. **Ensure kitchen handsink remains for handwashing only - not food prep too.
