Observation: Mouse activity observed in both dry food storage pantry rooms. Droppings noted (moderatet) on floor along walls and behind legs under shelving in both pantry rooms. Droppings noted on and in containers on shelves in cool pantry. No notable activity observed in kitchens.
Corrective Action(s): Get Pest Control in on more regular basis to trap and block access points as discussed.
Clean and sanitize food trays and equipment covered with mouse droppings in cool pantry.
Get bread in containers to protect from contamination and pest access.
Discarded adultered bag of pasta.
Remove cardboard under food containers on shelves as they are not intended to be cleaned, and can't be easily cleaned.

Comments

Quats sanitizer spray bottles measured in excess of 500 ppm at all four kitchen stations. Pump is broken in concentrate bottle. Fix pump system and make sure staff verify concentration in spray bottles with test strips on regular basis. If solution is above 200 to 400 ppm facility should implement a rinse step after sanitizing food contact surfaces.

Make sure staff record dishwashing temperatures (wash and rinse) during operating cycle not when unit is idle. Make sure the rinse cycle reaches 180 F on the guage.
*Dishwashers x4 reached proper 72 C (160F) at plate.

Cooling units all less than 4 C.
Small under counter freezers ranged between -8 C and -14C, others at -18 C.
