Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Food equipment including trays, inserts, vegetable choppers, blenders, etc. stored on lower shelves contaminated and amongst rodent droppings.
Storage racks in dry storage area contaminated with rodent droppings.
Rodent droppings found on box surfaces in walk-in cooler unit.

Correction: Ensure items are sanitized in dishwasher and affected areas are sanitized with 200ppm QUAT sanitizer solution.

Follow up inspection as a result of Closure Order.

ITEMS CORRECTED:
- Facility has been thoroughly cleaned and sanitized
- Pest Control Company has thoroughly investigated facility and made appropriate recommendations
- Pest Control Technician sealed holes found in booths
- Pest Control Technician added traps to booths and under freezer
- Pest Control Technician to return in 48 hours to asses infestation and inspect for areas of high activity
- Door sweep/skirt for walk-in cooler unit has been measured and will be installed shortly
- Lower equipment has been removed from all shelves in prep area and will be removed nightly for cleaning purposes
- Weekly monitoring by Pest Control Technician to occur
- Extra sticky traps provided to facility by Technician - ensure after vaccuming areas of high activity sticky traps are replaced with new ones
- Hollow wall has been indicated as possible nesting location - area to be renovated in future to add non-chewable plywood barrier along booth wall
- Hand sinks adequately supplied


ITEMS TO BE CORRECTED:
- Continue to receive at least biweekly services from Pest Technician
- Continue to clean so that monitoring of rodent activity can occur
- Install door sweep as soon as possible
- Ensure large amounts of traps in areas of high activity (under three door stand up freezer unit, under ice machine, in all booths)
- Follow ups by FHA to occur
