Observation: Pest droppings noted on counter/ledge in front service area. Evidence of recent activity in monitoring trap under hand sink. Some holes have been sealed where pests may enter.
Corrective Action(s): Immediately improve pest control:
- Clean and sanitize all counters /surfaces and clean up food/water spills right away.
- All food to be in pest proof containers. Keep single use containers in pest proof packaging.
- Continue monitoring for pests and seal holes where pests may enter.
- Continue with licenced pest control. Follow advice of pest control expert.

Comments

Coolers (walk in, sandwich prep) at 4C/ 40F or colder. Deli meat at 4C/40F. Pop cooler - pop/ water only.
Hot holding soup, chicken, chili, eggs - at 60C/ 140F or hotter - good.
Temperature records are being kept.
Hand washing sinks have hot/cold water, liquid soap, and paper towels.
Manager on site has equivalent to Food Safe training certificate - good.
Quats sanitizer at 200-400ppm as per label - 400ppm dispensed automatically.
Wiping cloths are stored in quats sanitizer.
Commercial dishwasher reached 71C/160F inside of the machine when final hot water rinse temperature gauge was just below 180F - ok.
Cleaning and pest control - see above.
Accessible family washroom - door is being repaired.
