Observation (CORRECTED DURING INSPECTION): Front of the house sanitizer bucket did not have enough chlorine sanitizer detected. Less than 50 ppm detected. Sanitizer bucket is placed in hand sink where it can be contaminated by staff washing hands.
Corrective Action(s): Ensure at least 100 ppm of chlorine sanitizer is available for front counter use. Ensure to store sanitizer bucket on dedicated counter and NOT in the hand sink.

Observation: Old food debris observed in hard to clean areas such as under dishwasher, food storage counters and on shelving. Remove dirty cardboard which is used on floor to absorb spills.

Hot and cold water available.
Washrooms are sanitary with fully stocked hand sinks.
Hand sinks in use with liquid soap and paper towels and cold and hot running water.
Ice machine is sanitary with dedicated hand scoop.
Temperature holding is adequate and in use with accurate thermometers and logs.
2-compartment sink in use. Bleach sanitizer in use at 200 ppm after correction.
Use bleach food grade sanitizer for food contact surfaces such as knives and cutting boards.

Disinfectant in use for tables - Floralice DCD 2.25% Quat DIN: 02292947.
Note: Only use the disinfectant solution for tables and common touch surfaces. Not for food prep areas.


Dishwasher final rinse at 75C at the plate.
No pests at the time of inspection. Pest control program and monitoring in place.
Sushi rice is satisfactory and discarded at end of the day.

Holding units:

Coolers at 4C and below, freezers at -18C and below. Hot holding units and soup units are at 60C to 69C.
Fresh cooked/deep fried items are placed in fridge for cooling within 2 hours after cook step.

Health Permit replacement forms left for operator.

Recommendation: some floor tiles and shelving tiles are starting to crack. Consider repair or replacement before it worsens in the near future.
