Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)] (Tempura stored under the heat lamp in the sushi bar is about 45-53C. )

Handwashing station is not obstructed and accessible
Operator obtaining bulb for heating lamp (sushi bar) at time of inspection - ensure it can maintain food at >60C
Food stored in the coolers were covered
Bleach sanitizer must be changed more frequently, the bucket by deep fryer is at 10ppm
-> Recommend using timers to remind staff to change sanitizer (every 1-2 hours)
Cleaning around dry storage room and sushi rice station has improved although fruit flies is still present
Leak in ceiling has been repaired and ceiling panel re-patched; light cover above dirty tray trolley is also fixed
Hole under sushi bar handwash station has been patched with cement like material.
Reminder that all surfaces must be smooth, non absorbent and easily cleanable.

*Discussed replacing new wall and flooring in the near future as multiple areas are starting to wear off; this will make the cleaning easier and improve with the pest situation
Food Safety and Sanitation Plans have been approved. Please keep a copy onsite for reference.
