Observation (CORRECTED DURING INSPECTION): Cooked meat (chicken and beef) found in tubs in cooler at 10 and 20 degrees Celsius. Items were cooked today. Amount of meat in container was too large and lids were placed tightly on meat.
CORRECTED DURING INSPECTION - Meat was split into two containers to allow for proper cooling. Lids were removed.

Corrective Action(s): Ensure surface area is large for cooling. Do not fill the shallow containers all the way to the top with hot meat. This will not permit for rapid cooling. Fill tubs only half way to ensure greater surface area of hot product.

Observation (CORRECTED DURING INSPECTION): Employee observed to leave cash station and put glove on hand without hand washing.

Corrective Action(s): Ensure Handwashing occurs prior to food handling. This includes before placing gloves on hands - gloves are not a substitution for proper handwashing.

Observation: Rice noodles in storage room stored in open cardboard box.

Corrective Action(s): Storage room 4 is heavily infested with rodents, both rat and mouse, and all opened food items must be stored in pest proof containers. Transfer all opened food items into pest proof containers immediately after opening OR move to kitchen.

- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine - EXCELLENT WORK!!! CONTINUE THIS PRACTICE OR PENALTIES WILL OCCUR!
