Observation (CORRECTED DURING INSPECTION): 1) Pearls left on the counter was made at 12:30pm according to the log on wall but was not discarded at time of inspection at 2:48pm. 2) Sliced tofu was stored in the top insert of the broken cooler.
Corrective Action(s): 1) You must follow your food safety plan to discard leftover pearls if unused within 2 hours. 2) Store cold potentially hazardous food at 4C or colder, including tofu.

Observation (CORRECTED DURING INSPECTION): Observed several wet wiping clothes stored on kitchen and bar counter.
Corrective Action(s): Remember to store wet wiping clothes in 100ppm bleach sanitizer between uses.

General:
Handwashing stations: soap, paper towel, hot & cold running water available
Walk-in cooler: 4C
Prep cooler is not working since morning and operator has already transferred food from broken prep cooler to walk-in cooler prior to inspection.
--> Please retain service report for review. Technician is supposed to repair today evening. Will follow up this cooler.
Freezers: -14 to -20C
Bar fridge: 3C
Rice: 62C
Hot holding units: soups 65 to 67C, tofu mixture and beef mixture 64C
Ice machine and bin kept in sanitary condition, scoop stored outside of ice machine/bin
Dishwasher (low temp): 75ppm at plate, test strips available
Bleach sanitizer available at 100ppm
Dry storage is adequate
*Note: supplier left dry products near back door near shed, always place products in dry storage right away
No apparent signs of pest noted at time of inspection
Reviewed Action pest control reports and there were no further signs of activity since May 10 catch.
