Observation: - Food debris/spill and grime noted on floor between counter and prep table on wheels where robot coupe is located.
- Minor amount of mouse droppings noted under shelving by back door and under shelving near 2 compartment sink
Corrective Action(s): - Clean areas above to remove debris/grime and droppings. Sanitize areas where droppings were present. Ensure these areas are monitored and cleaned regularly.

Observation: - Small leak (drip) noted from pipe under and to the left of the dishwasher.
Corrective Action(s): - Have leak repaired. Sources of moisture can attract pests.

Comments

- Handsinks were supplied with hot and cold running water liquid soap and paper towel
- Walk-in cooler was at 1C
- Walk-in freezer was -13C
- Cooler and freezer temperatures are monitored. Records appear complete/up to date.
- Food in walk-in cooler was covered and dated. Raw meats were stored beneath ready to eat items.
- High temperature dishwasher was operational and met sanitizing rinse temperature. Temperature at dish surface was 76.3C.
* Dishwasher wash and rinse temperatures are monitored and recorded three times daily with external gauges. Records reviewed and appear complete with the exception of the last three days in readings were lacking. Ensure dishwasher temperatures (wash, rinse) are monitored at the frequency specified in your sanitation procedures to ensure dishwasher is operating at required temperatures to clean and sanitize dishes effectively.
- Ice machine appeared clean and maintained.
- Quats sanitizer present. Concentration was 200ppm.
- Foods in dry storage room were stored on shelving (6 inches off of the floor) and dry goods stored in plastic containers.
- Pest control contract is in place with weekly service. Log in place to record any pest activity observed. *Send most recent pest control report to EHO for review.
- General sanitation was satisfactory with the exception of the areas noted in the violation above. An improvement in sanitation has been noted since the last routine inspection. Continue to maintain a high level of sanitation, including cleaning up any rodent droppings if present.
