Observation: Containers of diced tomatoes, minced garlic, chives and sliced mushrooms noted stored unprotected in the refrigeration units.

Corrective Action(s): Place plastic wrap or lid over the abovementioned food in the refrigeration units.
All food stored in refrigeration, freezer and storage units must be protected with a plastic wrap or lid to prevent potential contamination of food.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Debris buildup noted along the coil of the dish sink sprayer.
2. Heavy carbon buildup noted on the backsplash area of the deep fryer and oven. Grease buildup noted on the floor below the deep fryer.

Corrective Action(s): Wash, rinse and sanitze the abovementioned area and maintain in a sanitary condition.
Must clean heavy carbon buildup as it may lead to a potential fire hazard and become a food source for pests leading to a potential pest issue in the facility.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1. Sliced mushrooms stored directly in cardboard boxes (noted in 3 cardboard boxes) - labeled for sausages.
2. A bowl was stored within a bulk food container for use as a dispenser.

Corrective Action(s): 1. Transfer the sliced mushrooms to an approved container, one that is food-grade and has a smooth surface that will allow it to be cleaned and sanitized. Discontinue the practice of storing processed (e.g. cut/ cook) food in cardboard boxes. Do not store food directly in cardboard boxes as the cleanliness of the boxes cannot be guarenteed. The boxes cannot be cleaned or sanitized and may have chemical residual that can transfer to the food that cooking cannot remove to result in foodborne illness for the customers.
2. Remove the bowl from the bulk food container. Use an appropriate dispenser, one with handle, for dispensing food. This avoids direct or indirect contact from the hand to food which may transfer bacteria or toxin to the food.

Routine inspection conducted today:
Handwash stations, including the staff washroom, was accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were ≤ 4C. Note: Prep cooler missing door gasket, on order as per Manager.
All freezer units were ≤ -18C.
All foods stored at least 6 inches off the floor. Excellent food storage hierarchy.
200 PPM QUAT detected at in the sanitizer spray bottle. Note: Obtain QUAT test strips so that the sanitizer concentration can be tested to see if it is still effective over time.
400 PPM QUAT detected at the QUAT dispenser by the 3-compartment sink.
Facility performs manual dishwashing with a 3-compartment sink, drain plugs available.
General sanitation and organization noted satisfactory.
No signs of pest activities during the inspection.
FOODSAFE level 1 for Manager and operator verified - Manager's certificate expires November 7, 2023.
