Observation (CORRECTED DURING INSPECTION): Chopped mushrooms stored at 13 degree C in pizza prep cooler inserts. Inserts noted overfilled with food. Mushrooms were chopped and stored from the morning. (more than 4 hours).Chopped mushroom were discarded at the time of this inspection.
Corrective Action(s):
Do not overfill inserts so that temperature is consistant throughout the food.
Ensure to measure food temperature every 4 hours and record in your temperature monitoring log. If food temperature is above 4 degree C for more than 2 hours, discard food.

Observation: 1- Retrofitted lids on pizza prep cooler has not been repaired. Lids do not properly cover food. Lids are sliding around and food exposed to room temp is warmer than it should be.

2- It also noted one ceiling tile is missing above food prep table.
Corrective Action(s): 1- Ensure to repair/replace the lids so that they completely cover food in inserts and closed properly withhout sliding side to side.
Ensure food is protected.
2- Ensure the ceiling tile is placed above food prep table.

Important Reminder: Measure temperature in all your cooling units twice daily and record measurements in your temperature monitoring log. Each unit must have a working independent thermometer inside the unit. Also, obtain proper thermometer to measure food temperature in inserts.
