Observation (CORRECTED DURING INSPECTION): (A) Concentration of the chlorine sanitizer in the bucket was 10 ppm.
(B) Food debris was found underneath the guard or meat slicer.
Corrective Action(s): (A) Correction: Operator prepared new chlorine sanitizer with 100 ppm. Make sure the concentration of chlorine sanitizer is maintained around 100 ppm to effectively sanitize equipment, utensils and food contact surfaces.
(B) Correction: Operator cleaned and sanitized the meat slicer by taking the equipment apart and either putting into dishwasher or mopping with sanitizer solution. Make sure the meat slicer is cleaned and sanitized at least every 4 hours to prevent pathogen growth.

Observation (CORRECTED DURING INSPECTION): (A) Ice scoop was placed on ice in the ice machine.
(B) Five chick peas cans were stored on the floor under the hand sink in the staff washroom.
Corrective Action(s): (A) Correction: Make sure ice scoop is stored in a clean food grade container outside the ice machine to prevent from possible contamination by hand directly touching the ice when trying to get the scoop.
(B) Correction: Operator relocated those cans on the shelf at the dry storage area. Make sure food are stored at the designated area to prevent from possible contamination. Make sure food are stored at least 6" above the ground for cleaning and pest monitoring purpose.

Observation (CORRECTED DURING INSPECTION): Cardboard boxes were used to store food products such as salt, spices and peppers.
Corrective Action(s): Correction: Operator discarded cardboard boxes as they are not suitable material to store food products. Any materials that are not easily washable, cleanable and food gradable cannot be used as food contact surfaces.
