Observation: For secondary cook step, premises have been previously been approved for hot holding in steam table for 15 minutes. However, you must be able to provide documentation (i.e. temperature and time log) of the process. This was not available.
Corrective Action(s): Purchase a digital probe thermometer suitable for the donair chicken pieces and start log. Operator went out to buy digital thermometer at time. Alternatively, strongly suggest to use oven or microwave for second cook step (today).
