Observation: Back door when closed has large gaps where door seal is damaged.
Corrective Action(s): Replace weather strip on bottom of back door to provide a tight seal to exclude pests from entering premise.

Observation: Further cleaning to remove debris, food / grease build-up or mouse droppings in the following areas: both washrooms (floor corners and inside storage cabinets), hot water tank storage room (floor corners, behind door and staff storage shelving), kitchen (floor corners under sinks / dishwasher / under cooking equipment, 2 metal wire shelving units, ventilation hood / piping / ducting), walk-in cooler (floor under shelves, compressor and all metal wire shelves) dry storage area (floor corners around stairs under chili grinder), all 4 cooler units (door seals and shelving).
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.
Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine) after cleaning.

Professional pest control has been hired to address rodent infestation. Snap traps and tin cats deployed throughout premise.

Rodent poison and insect sprays removed from premise.
Kitchen painting of walls and ceiling has been completed.
