205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Repeat violation. Gulab jamun left out inside the cooler at 8C, with "one door" taken off. This was the EXACT same issue two years ago. Cooler was turned off approximately 1.5 hours ago.
Corrective Action(s): Gulab jamun, and other milk-based sweets such as rasgulla, were immediately placed back into the walk-in cooler. Do not place any items inside the walk-in cooler at any time until the door has been repaired and the temperature is at or below 4C.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Two bags of flour were left opened inside the dry storage room.
2. Scoops stored directly inside a container of dry flakes in kitchen.
Corrective Action(s): 1. Both bags were placed in containers at time of inspection. DO NOT leave open items in the dry storage room. Your dry storage room has evidence of mouse activity, including droppings! Keep all items secure so that they do not become contaminated.
2. Scoops removed. Store the scoops in a secure container and do not place scoops directly inside, especially the handles. The handles may not be sanitary and could lead to contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed along second-to-bottom shelving unit in dry storage area where the flour bags are stored. There is currently no evidence of chew holes or infiltration of dry storage products.
Corrective Action(s): Remove all rodent droppings with 1 part bleach, 9 parts water and saturate for 15 minutes. Wipe away and discard in a sanitary manner inside a garbage receptacle. Thoroughly sanitize again once rodent droppings are removed and let air dry. Call your professional pest control company and increase monitoring around the dry storage area. Continue to monitor for, and identify any holes that could lead to rodent activity. Install a door sweep along the bottom of the back door to prevent rodents from entering.

Observation: 1. Back door was wide open at beginning of inspection.
2. 1/2" gap present at bottom of back door.
Corrective Action(s): 1. Back door closed. Keep the back door closed at all times when not in use to prevent any pests from entering the facility.
2. Seal the 1/2" gap (e.g. with a door sweep) to prevent rodents from entering from the bottom.

Observation: Cooler door was taken off and the cooler was turned off with milk-based sweets still inside.
Corrective Action(s): Repair the cooler door and ensure that the display cooler is TURNED ON at all times. The cooler temperature MUST be at 4C or less. Do not use the cooler until a follow-up inspection has been made to verify that it is in good working order.

Comments

Routine inspection conducted. Renovations were recently completed - a new two-compartment sink had been installed with new stainless steel backsplashes in the dishpit area. However, the EHO was never notified of this change. Please inform the EHO prior to making any renovations.

- Walk-in cooler at 2C *NOTE: Temperature logs, as was in previous inspections, were NOT up-to-date. This is a repeat issue - you must maintain temperature logs every day to ensure that all of your equipment is working properly*
- Chest freezer at -24C
- Display cooler was turned off at time of inspection **THIS IS A REPEAT ISSUE - SEE VIOLATION CODE ABOVE**
- Hand wash station / two-compartment sink stocked with hot/cold running water, liquid soap, and single-use paper towels
- Premise is generally in satisfactory sanitary condition
- Dough mixer was just used - staff told to clean and sanitize at time of inspection
- Most items in dry storage area are fitted in plastic containers with tight-fitted lids
- Washroom in sanitary condition - hand wash station is adequately stocked inside
- Permit posted and up-to-date
- Email pest reports to the EHO
- Staff member has FoodSafe 1 (Expiry; March 13, 2023)

Any further issues with regards to cold-holding gulab jamun and/or using the display cooler TURNED OFF may result in enforcement measures including issuance of correction orders and/or violation tickets.
