Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Large amounts of rodent droppings located in the following food processing areas:
- Lower shelves of food preparation area where pans and other food processing equipment are stored
- Top of storage bins containing food in back dry storage area
- Floor throughout facility including bar, server pos area, kitchen, dry storage area, front restaurant
- in metal grates of lower shelf of green shelving unit adjacent to stand mixer
- Floor under and behind stand mixer

Correction: Remove all dishes and equipment from lower shelves until rodent infestation is eliminated. Find new locations for any item stored on floor in bar. At night remove dishware from lower shelves sanitizing shelves once open in the morning.
Run all equipment and dishware through dishwasher on sanitizing cycle.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.

ITEMS CORRECTED:
- Facility has had extensive cleaning throughout
- Rodent droppings have been eliminated from facility
- Pest Proof containers have been replaced for those damaged in storage of dry good food items
- Additional holes had been sealed
- Pest Technician inspected facility. Entry points determined and sealed. Additional traps placed throughout.

CLOSURE ORDER RESCINDED

ITEMS TO BE CORRECTED:
- Additional cleaning to facility. Walls require cleaning throughout facility as mould and food debris has accumulated

EHO to return next Wednesday 20th for follow up inspection.
