Observation (CORRECTED DURING INSPECTION): Beef roast prepared yesterday morning had an internal temperature of 12 C.
Corrective Action(s): Discarded. Since they are used for sandwiches, discussed slicing and portioning the roast after cooling has taken place.

Comments

Hand sinks supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C, except for the bar prep cooler.
All freezers were < -18 C.
Temperature records are up to date.
Quats sanitizer solution was at 200 ppm.
Dishwasher final rinse cycle reached 72 C at the plate level.
The bar glasswashers (2) had 12.5 ppm Iodine.
No evidence of pests.
General sanitation was satisfactory.
