Observation (CORRECTED DURING INSPECTION): Pizza preparation cooler inserts of food measured at internal temperature of 8-12'C (e.g. cut green peppers, tomato sauce) with probe thermomter. Preparation cooler insert covers observed removed. Inserts contain cut vegetables, meats and cheese. Staff stated that inserts were refilled less than half hour ago. All inserts were placed in a functioning cooler (at or below 4'C) during inspection.
Corrective Action(s): Keep the pizza preparation cooler inserts covered at all times to prevent temperature increase and time-temperature of potential hazardous foods. Do not store any foods in the preparation cooler inserts until the temperature is measured at or below 4'C. Continue to store all insert foods in the bottom of the preparation cooler or other cooler until the cooler is verified functioning by the health inspector.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION):
1. When asked, staff on site was not able to demonstrate the 3-compartment manual warewashing procedure. Staff was educated during inspection. Manual warewashing sign was provided to staff during inspection.

2. Bleach sanitizer in spray bottle measured >>200 ppm chlorine concentration with test strip. Spray bottle is observed not functioning. Staff prepared fresh bleach sanitizer in a bucket with a wiping cloth during time of inspection which measured at 100 ppm chlorine concentration.
Corrective Action(s):
1. Re-train all staff to ensure they are able to wash all dishes manually (as per approved sanitation plan) using the 3-compartment sink method. Ensure staff are educated on proper wash, rinse and sanitizing steps to adequately sanitize all equipment, utensil sna dishes.

2. Prepare bleach solution in labelled, functioning spray bottles at a concentration of 100-200 ppm chlorine concentration by mixing 1/2 teaspoon of bleach with 1L of water. Ensure to sanitize all food contact surfaces every 2-4 hours (or as per approved sanitation plan).

Observation (CORRECTED DURING INSPECTION): Hand washing station in staff washroom is observed not supplied with paper towel or other single-use hand drying method. Staff placed paper towel in the staff washroom during inspection.
Corrective Action(s): Maintain all hand washing stations unobstructed and supplied with hot and cold running water, liquid soap and paper towel to ensure staff are practicing proper hand hygiene to prevent contamination of food and foodborne illness.

Observation: Few house flies observed on site during inspection.
Corrective Action(s): No traps observed in place on site. Keep all doors and windows closed to prevent fly entry on site and to prevent potential contamination of food. Install yellow sticky fly traps in non-food preparation areas to rid current population of house flies.

Observation (CORRECTED DURING INSPECTION): Front door observed propped open during inspection. Back screen door observed propped during inspection. Both doors were closed by staff during inspection.
Corrective Action(s): DO NOT keep any doors on site open to prevent potential pest entry on site. Ensure the back screen door is able to maintain a tight seal to prevent entry of pests such as rodents and/or flies.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Pizza preparation cooler insert cover/doors observed not in good working condition, stored on the side. Staff stated that the doors would be repaired in a few days. All food from the inserts was transferred to a functioning cooler during inspection.
Corrective Action(s): Repair the pizza preparation cooler doors to ensure the doors cover the inserts at all time and the inserts are able to maintain 4'C or lower. Do not store any food in the pizza preparation inserts until the cooler inserts are verified to maintain 4'C or lower by the health inspector.

Observation: [REPEAT VIOLATION] In operator's absense, no staff on site has FOODSAFE Level 1 training or equivalent. Staff stated they will apply for FOODSAFE training and submit proof of application to the health inspector.
Corrective Action(s): Register AT LEAST one staff member on site for FOODSAFE Level 1 training or equivalent to ensure at least one staff member has training at all times. Submit proof of FOODSAFE Level 1 training application to the health inspector by the end of the day (May 17, 2023). Failure to comply may result in progressive enforcement.
