A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Low temperature dishwasher had a [Cl2] between 50-100ppm. Test strips present.
- Quats sanitizer in cloth buckets and spray bottles had strength of 200ppm. Test strips present.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and all foods stored 6" off the floor on shelves, racks, or on pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- Valid FoodSafe certified staff present, or those possessing an equivalent certificate.
REMINDER
Schedule the exhaust canopies to be professionally cleaned and serviced this month. The service sticker indicates it shall be done by May 28/23.
Ensure staff are cleaning the floor, under the deep fryers and flat grills, all the way to the back wall, every night. There is accumulated food, plastic bags, and other debris behind/beneath these cooking equipment. |
