Observation (CORRECTED DURING INSPECTION): No sanitizer was detected at the source dispenser. Cloths stored in containers with 0ppm quat. Manager said that the sanitizer dispenser is not working and had called the technician approximately two hours prior to inspection. No food contact surface sanitizer available at time of inspection. Manager was unsure of corrective actions in the interim of sanitizer dispenser being fixed and unable to find concentrated sanitizer bottle in order to proceed with manual mixing of sanitizer solution. Instructed manager to contact store owner to initiate corrective action procedures as corporate food safety and sanitation plans were unable to be located. Owner walked manager through process of where to find the concentrated sanitizer bottle and manual mixing of sanitizer solution. Test strips available on site to verify sanitizer concentration. Technician arrived on site by end of inspection.
Corrective Action(s): Ensure sanitizer solution is available at all times during operation and all staff aware on corrective actions to take in case of source dispenser failure.
