Observation: Some mice droppings noted along the back of the bottom shelves behind the sushi prep area and on the lids and floor of the dry food containers in the kitchen.
Corrective Action(s): Wash all the lids. Clean all the droppings using a bleach solution and monitor for mice activity. Set traps and/or contract out a pest control company for servicing.

-All coolers are below 4 degC
-Freezer temperatures are below -18 degC and/or foods are frozen
-Dishwasher rinse cycle had 50-100ppm chlorine.
-Miso soup was at 77 degC; Rice was at 66 degC; Teriyaki sauce on the grill was at 69 degC
-200ppm bleach solution is available for sanitizing
-Hand sinks and washroom sinks are fully equipped
-Tested sushi rice for pH. It was approx. 4.0.
-Provided Covid-19 info pkg; operator is closing the business till April 1.
