Observation: 1) Dust accumulated on ceiling tiles. The dust could fall into food and contaminate it.
2) Food stains found on the wall under the prep table where naan dough is rolled out and placed in the tandoori oven. The food stains will attract pests.

Corrective Action(s): Wash and clean the mentioned areas to remove the dust, grease, and food stains. Ensure this is done every day.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Aluminum foil, will accumulated grease and food, is lining an upper shelf in the naan dough prep area. The foil is not clean and is only made to be used once and then discarded, as it will attract pests.
Corrective Action(s): Immediately remove the foil and stop using it. The stainless steel shelf under the foil is in good repair, and is easily cleanable. Stop covering the shelf with foil, and clean the shelf every day.

501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
Observation: The owner has an expired FoodSafe Level 1 certificate. The owner was the only one present that had taken the FoodSafe course. The owner must possess a valid FoodSafe Level 1 certificate so he can instruct staff on the safe processing of food.
Corrective Action(s): Immediately enroll into the next FoodSafe Level 1 course, and successfully complete the course and obtain a valid certificate.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezer was -22C; hot holding units above 60C; and thermometers present.
- A new low temperature dishwasher has replaced the old high temperature dishwasher. The [Cl2] of the low temperature dishwasher, during the rinse cycle was 50ppm. Test strips present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; labeled; foods stored in groups with proteins below RTE foods; and all foods stored 6" off the floor on shelves or racks.
- No expired foods in use of for sale.
- General sanitation level is good. Improvement needed in the mentioned areas.
- The exhaust canopy was professionally cleaned in February 2022, next service due in August 2022. Ensure the exhaust canopy and filters are washed and sanitized every month by staff, to prevent accumulation of grease and dust.
- No signs of pests.
- Proper cooling methods being followed for batch cooking of sauces, meats, and appetizers (pakoras, manchurian). Foods are allowed to cool at room temperature on trays or large sauce pans, and then placed in the cooler.
