Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution for storing wiping cloths was at 0 ppm. Operator stated the solution was made 2 days ago.
Corrective Action(s): Fresh bleach solution must be prepared DAILY and changed every 4 hours. Ensure to mix 1 oz of bleach to 1 gallon of water for proper concentrations.

Observation: Small amount of mouse droppings found in corner of dry storage room and along wall by back door (under equipment/dish storage rack)
Corrective Action(s): - Clean and sanitize all areas with mouse droppings TODAY, and check daily for new droppings
- Seal any possible pest entry points
- Get a mechanical trap placed in the dry storage room.
- Pest control services were last provided on October 7th.

Comments

- Hand sink was supplied with hot and cold running water, liquid soap, and paper towels
- High-temperature dishwasher reached 73C at plate surface level during rinse cycle
- All coolers were at or below 4C
- Freezer temperatures were satisfactory
- General sanitation satisfactory
- Most items in dry storage were stored in pest proof containers with lids. *Ensure all items are covered and kept off the floor.
- No cardboard or newspaper was being used to line shelves - good.

Note:
- The amount of mouse droppings has decreased since the previous inspection - good. Reminder to monitor on a daily basis.
- Reminder to defrost/thaw frozen food (such as frozen fish) in the refrigerator overnight or under cold, running water. Must not thaw in the sink overnight!
