ITEMS CORRECTED:
- Areas contaminated by rodent droppings have been cleaned and sanitized
- Cleaning has occurred - sanitation of facility has been greatly improved from previous inspection
- Back cooler/freezers are locked
- Back door is now tight fitting

ITEMS TO BE CORRECTED:
- Additional cleaning to occur including: rolling racks, under grill
- Discussed with Kitchen Manager - rolling racks can be taken outside to be power washed and grill area will require additional cleaning as white tiles are completely covered in caked on grease and food debris in back area from years of neglected cleaning
- Continue to monitor for rodents as area is heavily infested with rodents

AMBIENT TEMPERATURE FOOD HOLDING:
- Facility has submitted via email documentation in regards to the ambient temperature holding of food for two hours
- Documents include the type of food to be held and maximum time
- TWO binders with records on site today. Copies of records emailed to EHO. The date, time, food type and amount are all logged. Records go back from March 15, 2024. Current process is approved.
- TIMERS are located in each food preparation area (one in the vegetable area and two in the meat preparation area). These timers are for the food items that are to be held at ambient temperature.
- Food past the two hours will be disposed of
- Two hours will be the maximum allowable time foods can be held at ambient air temperatures until such time as facility achieves good sanitation at next routine inspection. Facility MUST maintain good sanitation for ambient temperature food holding to continue as per the BC CDC Guideline. Any future closures due to poor sanitation will jeopardize ambient temperature food holding - facility must demonstrate good sanitation.
- If facility wishes to change procedure this must be approved by FHA
*** EHO will be reviewing records at EVERY inspection as long as ambient temperature of food holding continues to occur.
