Observation (CORRECTED DURING INSPECTION): At the time of inspection quats concentration in spray bottle well over 400ppm.
Corrective Action(s): Ensure for santizing food contact surfaces a 200ppm quats sanitizer solution is used. Staff have discarded, rinsed, and refilled the spray bottle with 200ppm quats.

Observation: Several fruit flies observed in/around the preparation cooler with inserts in front service area.
Corrective Action(s): Clean all spills quickly. Cover all food to protect from contamination. Have your pest control company make an assessment and address the fruit fly activity in premise. Correct immediately.

Observation: At the time of inspection staff member with FOODSAFE level 1 or equivalent shift ended and left the premise. Only remaining staff does not have FOODSAFE level 1 or equivalent.
Corrective Action(s): Send additional staff to take FOODSAFE level 1 or equivalent by September 1, 2023.

Routine inspection:

Hand sink provided with liquid soap and paper towels.
200ppm quats dispensed from chemical dispensing station at 3 compartment sink.
Walk in cooler at 1 degrees C.
Walk in freezer at -20 degrees C.
Preparation cooler inserts at or below 4 degrees C.
Hot holding of meat balls above 60 degrees. Soup at ~ 40-45 degrees C. Soup no longer to be offered for today and will be discarded.
Beverage cooler at 6-7 degrees C. No cold potentially hazardous foods displayed.
Temperature monitoring records maintained and available for review.
Permit posted in plain view of the public.
