Permit to operate was posted in a conspicuous location.
Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Proper handwashing practices were observed during the inspection.
Prep. cooler in the front service area was at or below 4 degrees C (measured at 3 degrees C).
Prep. cooler in the back kitchen was at or below 4 degrees C (measured at 1.3 degrees C).
Small white beverage cooler (containing pop and water bottles only) was above 4 degrees C (measured at approximately 6.7 degrees C).
Refrigeration units were equipped with thermometers.
Upright freezer and both chest freezers were at or below -18 degrees C.
Hot-held food (rice and miso soup) were at or above 60 degrees C.
Sushi rice pH was below 4.2.
Separate cutting boards are used for raw meat than ready-to-eat food. Cutting boards are cleaned and sanitized after each use.
100 ppm chlorine sanitizer was available inside two spray bottles.
Dishwasher final rinse temperature was at or above 71 degrees C (measured at 75.7 degrees C) at the plate level.
Dishwasher final rinse temperature was at or above 82 degrees C for at least 10 seconds at the manifold level.
Ice machine is not use according to the Operator and it was observed to be empty of ice.
No signs of recent pest activity were evident at the time of inspection.
Operator with valid FOODSAFE level 1 course training (expiration date: August 19, 2024) was present on shift.
