Observation: 1. Internal temperature of shrimp in the sunomo salad bowls stored in the front upright cooler registered 12 degrees C.

2. Mayonnaise was found stored at room temperature.
Corrective Action(s): 1. All salad bowls containing shrimp were discarded. Repair or adjust the cooler so that it maintains foods at 4 C or below at all times. Do not use this cooler in the mean time to store perishable foods. (Immediately).
2. Mayonnaise once opened must be held in the refrigerator at 4 C or below at all times.

Observation (CORRECTED DURING INSPECTION): Sushi fish (Salmon) was found stored undernath raw eggs.
Corrective Action(s): Do not store sashimi fish underneath any raw chicken, eggs or beef.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Debris and grease build up noticed on the floor especially underneath and behind freezers, coolers, ice maker, sinks and dishwasher. The cooler door rails extremly filthy. Build up noticed on the handles, knobs and exterior surfaces of the sushi bar and under counter fridges. Debris noticed behind the deep freezers.
Corrective Action(s): Floors require thorough cleaning throughout the restaurant. Pay special attention to areas underneath and behind the equipment.
Clean the interior surfaces, handles and door rails for coolers. (By Sep 1, 2017).

Corrective Action(s): Chlorine bleach sanitizer spray bottle must be labelled accurately. Ensure to use only teaspoon of bleach in a small 1/2 litre spray bottle.

* Ensure staff change gloves in between tasks and wash hands before putting on a new pair of gloves.
* Ensure to monitor and record temperatures for all coolers and hot held food items. All coolers must be specified on the log sheet.
* Dishwasher final rinse chlorine concentration and chlorine bleach sanitizer in spray bottles must be tested and recorded at least once daily.
* Sanitation plan must include weekly cleaning duties and checklist. A copy of the sanitation plan must be kept onsite at all times.
* Fume hood must be serviced/cleaned by September 1, 2017.
