Observation (CORRECTED DURING INSPECTION): Jalapeno ranch sauce probed at 22.7 deg. C and pesto sauce probed at 21.1 deg. C. Operator stated that they had been taken out 2 hours ago.
Discard the two sauces as they are above 4 deg. C for 2 hrs and will not be able to be cooked quickly.

Observation: 1)Countertop mounted can opener has leftover food debris. This should be cleaned and sanitized thoroughly after each use. Have can opener cleaned and sanitized before use.

Observation: Large patch of mold on wall next to three compartment sink, underneath sink and on rodent box. Have mold wiped away with soap and water solution and monitor for mold growth. Ensure area is kept dry so it does not promote mold growth.
