Observation (CORRECTED DURING INSPECTION): Tempura batter observed being stored at room temperature. An ice bath was put together at time of inspection

Observation: Underside of counter diectly above the food preparation surface at sandwich station observed with food splatter build up

Corrective Action(s): Store wiping cloths in containers of quat sanitizer at 200ppm when not in use (Fully submered) and change the sanitizer every 2 hours.

Observation: Cooked ready to eat food observed being cooled next to raw potentially hazardous food preparation.
Raw potentially hazardous food observed being stored above ready to eat food in storage coolers. This was relocated at time of inspection
Corrective Action(s): Always keep raw food preparation away from any ready to eat food items.
Always store raw potentially hazardous food on the lowest shelf with ready to eat food items stored above.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Wash temperature at dishwasher is too low at 102F even though the hot water temperature at the adjacent 3 compartment sink is 120F.
Food items stored on the floor in the back room area due to a lack of shelving.
Several lights observed not working in ceiling Fluorescent light fixtures.
Knives observed being stored in wood knife block
Corrective Action(s): There may be a mixing valve that needs to be adjusted at the dishwasher which is limiting the wash water temperature. Raise temperature as instructed.
Install additional shelving and ensure the bottom rung is at least 6in up off the floor to allow ease of cleaning.
Replace non working fluorescent lights in ceiling fixtures.
Remove wood knife block as these are or residential use not commercial as the unit cannot be properly sanitized. Recommend installing a magnetic strip to hold the knives.

If secondary employee washroom is to be used for storage the toilet will need to be removed and the plumbing capped.
