Observation (CORRECTED DURING INSPECTION): "True" cooler is measured to be 6.9oC (air temperature). Operator indicated this cooler stays empty during night time and all foods are transferred here during daytime. No temperature log available for review. Operator indicated temperature rises really fast with this cooler and it takes more than 30 minutes for temperature to go back down to 4oC.
Corrective Action(s): Please be reminded that foods can only be in the danger zone for 2 hours, then discarded afterwards. If operator knows this cooler is used heavily during the day, try to divide the load to other coolers. Do not use this cooler if temperature can not be maintained at 4oC or less for most of the time.
All perishable foods move to other coolers.
