Walk in cooler and prep cooler and pop cooler - all at 4C/ 40 F or colder.
Upper inserts - prep cooler - 4C and inserts are not over stocked - good. Use food in inserts quickly and re-stock with fresh food.
Temperature records are being kept for cooler temperatures.
No hot holding today.
Temperature records are kept daily for wings (poultry) cooking temperatures - 74+C (165F) - good.
Thermometer available. Sanitize before using - good.
Sauces - labelled ok for room temperature storage.
