Comments

cooling units less than 4 C.
hot holding above 60 C.
freezer at -16 C.

*Make sure to keep rice spoon in unit, or in ice bath or quats solution at 200 ppm - do not use bleach for this purpose. Replace every two hours.

Sanitizer spray bottle in kitchen area measured in excess of 500 ppm. Acceptable for Covid hard surface contact disinfection, not appropriate for food contact surfaces. Create second bottle with dilution as per submitted sanitation plan to achieve 100 - 200 ppm solution (1/2 teaspoon to 1 litre water).

Monitor upright cooler for ability to maintain 4 C. Keep daily logs.

As part of Covid 19 and general sanitation plan purposes the creation of a hard surface checklist is needed. Please create and include as part of both plans.

Covid 19 Safety Plan:
- Written plan on-site.
- Employee health screening not complete - Daily check-in not tracked, symptom review outdated/not detailed, and travel history not tracked.
- Barriers inadequate at ordering station - Sneeze guard must be extended to height that will not allow droplet contamination of food environment by customers. Similar barrier missing at cash exchange.
- No directional arrows or distance markings on floor to ensure safe movement of customers through store.
- No hand sanitizer dispenser for public at entry, ordering or cash register. Insufficient hand sanitizers available for staff at key locations in premises to supplement handwashing.
- No maximum occupancy sign, mask sign in poor condition - update all signs at front door.
Update Covid 19 plan as discussed.
