* Ensure that paper towels dispenser is in good working order.
* Repair or adjust the produce cooler door so that it closes properly. Remove and clean all debris from the door rails.
* Ensure that trip sink compartments are thoroughly cleaned and sanitized ( with 200 ppm chlorine) after washing any
food processing equipment and utensils.
* Chlorine bleach sanitizer ( 100-200 ppm: 1 oz bleach per gallon of water) must be available to use in buckets or spray bottles at all times.
