302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) No sanitizer present in spray bottles. Numerous spray bottles were also unlabelled as a sanitizer.
2) Two trays of allegedly washed and sanitized utensils were soiled at time of inspection. Tray contained debris at the bottom, and portable can opener was saturated with food grime.
Corrective Action(s): 1) SPRAY BOTTLES / SANITIZER

5 spray bottles were acquired for the following stations:
- 2 in the prep area at the back of the kitchen
- 1 in the work area across from the dishwasher
- 1 at the serving table
- 1 in the bar area
- 1 for the general dining area

These spray bottles were identified by green tape as sanitizer and each had 200 ppm chlorine residual. Keep your spray bottles organized and use them!

2) UTENSILS / TRAYS

- Utensils and their trays were run through the dishwasher at time of inspection
- Always wash, rinse, and sanitize utensils after use by runnig them through the dishwasher, and store them securely to protect them from contamination

Observation: Multiple issues noted:
1. Ice machine contains a dark mould-like residue on the edge of the inner lip of the ice machine.
2. Plastic take-out bowls observed for containers of rice and gulab jamun inside walk-in cooler.
3. Peeled onions stored inside dairy crates (not food grade)
Corrective Action(s): 1. Empty ice machine. Wash and rinse with soap, and then thoroughly sanitize the interior with 200 ppm chlorine residual. This should be done on a monthly basis. (Correct this by Nov 28, 2018)
2. Bowls removed from containers at time of inspection. Do not store bowls inside sauces.
3. Peeled onions transferred to food-grade bins.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Ventilation slats are saturated with grease.
2. Area underneath cook line has accumulated oil.
3. Area underneath dry storage has accumulated some dry products.
Corrective Action(s): 1. Degrease and run ventilation slats through dishwasher.
2. Thoroughly mop area underneath cook line to remove accumulated oil.
3. Dry storage area needs to be swept.

Observation: Cardboard used to line shelving in walk-in cooler.
Corrective Action(s): Cardboard was removed at time of inspection. Do not use cardboard to line shelving - you should be using a smooth impervious material (for example: shelf liner) so that it can be easily cleaned.

Comments

Routine inspection conducted. Area is generally well-lit, most areas in sanitary condition except for aforementioned areas under code 306.

The following observations were made:
1. Temperatures
- All temperatures meet health requirements
- Walk-in cooler at 2C
- Beverage / beer coolers at 4C
- Undercounter beverage coolers at 2C
- Dumpling chest freezer at -15C to -18C
- Walk-in freezer at -18C
- Sandwich prep coolers at approximately 2-4C
- Mini sandwich prep cooler at 4C throughout
- No hot-holding performed at time of inspection
- Temperature logs generally maintained and up-to-date, but is incomplete. Not all coolers are logged on this temperature log. Revise your log so that it includes all coolers

2. Hygiene and Sanitizing
- Hand wash stations (in 2-compartment sink, in corner of kitchen) stocked with hot/cold running water, liquid soap, and single-use paper towels
- Low-temperature dishwasher dispenses 100 ppm chlorine residual at final rinse, at the plate

3. Storage
- Food products generally stored at least 6" off the floor - good
- Dry storage products are inside tight-fitted Rubbermaid containers - good
- Take out containers are securely stored inside original bags

4. Pest Control
- No signs of recent, visible pest activity at time of inspection
- Please send pest control reports to the health inspector by Dec 3, 2018
- Back door is tightly shut. Keep it tightly shut to avoid rodents from entering the facility. Your mesh cover is not tightly sealed (especially at the bottom) and therefore, will not prevent rodents from entering. If you wish to open the door in the summer, you must ensure that your screen
- Areas underneath dry storage and above walk-in cooler are fitted with netting, integrity of netting is still good. Continue to monitor netting to ensure that rats / mice do not enter the facility

5. Administrative
- Permit posted and up-to-date
- Operator has FoodSafe 1 (expiry: July 29, 2018)

6. Recommendations
- Numerous cans of empty recyclable products were observed on site. As stated in previous routine inspection, you should be keeping your clutter / recyclable items to a minimum on site
- Some plates are filled with dust - operator claims that those will not be used for a while. Protect those plates from contamination by storing them in a secure container (e.g. Rubbermaid bin)
