Adequate manual dishwashing procedures in place. - 200 ppm Quat sanitizer is available - Dry storage areas are maintained - No signs of pests observed - Premises is well lit Note: - Monitor walk-in cooler temperatures as it appears to be elevated but continuing to drop (approximately 7°C). Arrange for repairs if temperatures do not fall below 4°C.
